Meatless Monday Recipe Roundup: Sweet Potatoes!

Sometimes veggie cooking can get a bit boring so we hunt the interwebs for new ideas. With winter on our cold minds, our thoughts have been on fireplaces, s’mores, root veggies and anything toasty and easy….after all, cooking can be taxing when you are lying under a snuggie.

Both of us noticed a strange draw towards the humble sweet potato.  This versatile ground dweller can star in breakfast, lunch or dinner and can be cooked in multiple sweet and savory ways.  Here are our favorite Meatless Monday recipes STARRING Sir Sweet Potato!

Baked – a la Monica

Easy peasy way to bake sweet potatoes – 1 or 2 sweet potato in the toaster oven baked at 400 degree for approximately 45 minutes or until tender.  Cut it open and scoop out the soft mush sweet potatoes into a bowl.  Sprinkle The Spice House: “Gateway to the North Maple Garlic Seasoning.”  All done!



Sweet potato hash is a breakfast celebrity.  Add brussel sprouts, broccoli, or (for meaty peeps-bacon) and you have a blockbuster breakkie hit on your hands.

Here’s a great recipe choice from The Greatist.  Kate made this sweet potato & brussel sprout hash for a coworker potluck and people were scraping the bottom of the pan.  No leftovers here ya’ll!



Not sure if you noticed, but BOWLS are all the rage, the absolute bees knees in food trends.  Throw a bunch of toppings together of your choice, add dressing and voila: a bowl is born.

This vegan recipe starlet comes from and features super food kale, chickpeas, quinoa and plenty of spice.


Smashed – a la Kate

Warning: this is not for fancy cooks–too simple 🙂


  • 1 Medium Sweet Potato
  • 1/2 cup Silk Coconut Almond Milk
  • 1/4 Stick Butter (or vegan butter)
  • Salt and Cinnamon to Taste


Boil 3 cups of water in a medium sized sauce pan and dump in 1 medium sized washed sweet potato.  Boil until a fork goes through it (about 20-30 minutes).  Drain the water. Add 1/2 cup of Coconut Almond Milk, 1/4 stick butter or vegan butter substitute, and salt and cinnamon to taste.  Smash the potato with a fork until all the ingredients are smooshed in the desired consistency is reached. Serve with homemade vegan refried black beans, roasted brussel sprouts, avocado and an over easy egg!
